temp gauge wacky after engine swap

new to the site and I just installed a Jasper engine and the temp gauge now reads hot intermittently, never did it before, other than the temp everything else runs great. Scanned the radiator and coolant and it never gets over 200 when the gauge is reading "hot", checked all grounds even installed another one to be sure, swapped temp sending units, rechecked all my connections to make sure didn't bend a pin when reconnecting. Disconnected the alternator still acts the same ( I was told a failing alt would cause a high temp). REALLY wanna get to driving my "new" truck, any ideas guys??? REALLY appreciate any help...

If you're sure the ground straps to the engine are clean and tight, you should probably examine the wiring harness closely to see if there is any wiring damage.
