I used to work outside in those temps when I worked in an open pit mine on blast days moving equipment. Hard on the toes and fingers..

Have to tend to it the first several hours.. turning it every 45 minutes.. the last 3 hour are done in foil..

I've never smoked anything in my life but cigarettes when I was young...lol

I only started smoking stuff 15 years ago or so. Mainly was grilling everything.. still have to work on my beef smoking technic.. it doesn't come out the way I would like.. Had my best luck with that in the crockpot..

There was an American friend I had here who owned a camp that smoked deer that was much like corned beef..
