Okay, so a few days ago, after I had done some off-roading, my steering wheel started making a werid almost whizzing noise and vibrating everytime I turned it a little bit. So I put some power steering fluid in it (it was like bone dry), and it stopped. However, I recently got 3ft of air from a railroad crossing, and went to work and I came out roughly 7 hours later and it was doing it again. Did I **** sumpin up? I haven't checked the fluid again yet but I did notice a bit when i pulled out. Could I have caused a leak in my powersteering?

Probably.
Is it also "low" again?
Surely you've checked by now ...
... you could have checked the level faster than logging on here to ask.
I'll bet you did. Why not just check your fluid level instead of logging on here and askingo us if you messed something up? Crawl under it and look for damage. Why would you abuse a truck you wanna drive everyday by jumping it?

i didn't do it on purpose, long story short, there are a lack of signs and many well hidden railroads in Montana.
Abuse it and have fun with it, its yours, you can.
When the power steering pump starts to go out it will start whining like that. If it is not low, it could be that, look into the AC Delco upgrade from the 80's van steering, direct bolt in and works much better.
If the fluid is starting the leak out, it could be the lower shaft seal on the steering box. It is sealed with o-rings and you'll either have to rebuild it or have a rebuilt one put in.
I have nothing to add to the issue the OP has but I'm interested in the AC Delco 80's van upgrade, because I need a new PSP. Mine leaks because I'm a dumb a$$ and put a breaker bar under the reservoir to leverage it up to put tension on the belt. That caused the reservoir to bend and pull away from the mating surface some and now it leaks a little bit.
They call it the Saginaw Steering upgrade, but the pump was originally an AC Delco pump now made by Saginaw IIRC. Have one on my truck, the hose has to change, I used a van hose on my 2wd. Bring the original hose from your truck, and make sure to match the o-ring fitting on the pump and the double flange fitting on the original steering box.
