Gauges! Especially if you plan on adding a tuner. You need to keep an eye on your EGT's and ATF temp. After that I would add exhaust, a 6637 air filter conversion, then FRx and HPx from RiffRaff Diesel.
Personally, I prefer the AFE Big Boost air filter. Basically it's like the 6637, but it's reusable.

Check out the 7.3L forum. Tons of info there for you. This Excursion forum covers everything Excursion related, which includes the 5.4, 6.8, and 6.0 engines. Since you want specific 7.3L info, go submerse yourself in the 7.3L forum. But be warned, you'll be spending a lot of money in short order due to PMS. Powerstroke Mod Syndrome.
Gauges if you tow much is right. Stay away from superchips and other "canned" tunes. Just like Mike's 5star on the V10 the best three for the 7.3 are Dptuner, PHP, and Tony Wildman. And the money is about the same. You can tell them what equipmaent you have and your uses and they can tailor your tunes.
Lotta guys don't like the extra sound in the cab with a straight piped rig. Most guys just stick with the MBRP setup, or whatever aftermarket muffler that comes with their setup.
Weak, compared to custom tunes by one of the big three or four. The Edge just doesn't compare. It's like trying to use a small pen light for the Bat light intead of a spot light.
You can go with a straight pipe, but as Stewart said, some guys don't like the noise in the cab. If you're one of those guys, hack off the stock muffler and get yourself a Walker BTM (Big Truck Muffler). It bolts right in and sounds awesome!
I have an edge evo2 custom tuned by power hungry performance. Having this setup gives you the gauges and a custom tuner in one. As far as exhaust, Diamond eye 4" turbo back is cheaper than mbrp and I installed it myself with no issues. If you tow you will want to eventually get an upgraded suspension. I did modded b codes on the back and v codes on the front. If you can turn a wrench you and don't mind the work, these mods are the most economical without sacrificing quality product. If you have $$ to burn, the sky's the limit. I allready had an afe intake so I don't have any suggestions for that. I have saved alot of $ by doing the research. My 02 ex also got an upgraded 6.0 tranny cooler that significantly lowers the tranny temps to help keep the tranny cool. I know some will disagree with the tuner choice so do your research and choose what is best for you. Good luck.
That was my thinking behind the Edge, tune + gauges! I definitely don't mind turning a wrench and busting some knuckles! However, I am on a very limited budget and the Edge seems like the way I may be leaning! Still really torn on exhaust, part of me just wants to cut it all out and let it roar, another part wants to keep it as nice and subtle as possible.... So I have a feeling the exhaust will come down to an absolute toss up! It will depend on how I feel on that given day! You know what I mean?

As far as an intake goes, I am caught between a 6637 Conv or plain jane cold air intake from Jegs..
Plus I am going to purposefully space mods out between camping runs, so I can really see how each mod does.
After all of that, I plan on moving onto the suspension, tranny cooler, etc...

The difference is, you have custom tunes by Bill at PHP loaded onto your Edge. You're not running the canned tunes.
I don't pay much attention to the questions in the 7.3 forum regarding the Edge, but IIRC, there's something about transmission shift stratagies some guys were worried about, in regards to the canned tunes.
