Newbie Question - Whats my engine?

Your engine is from the Y-block family, which includes the 272, 292, and 312 as the more popular sizes. I'm not sure if there is any way to absolutely distinguish the differences externally. But if there is a way, someone here will know.
Regarding your VIN question. First, Ford didn't have a V6 engine back in the 50's. So if it was a 6 cylinder in there originally, it would have been an inline 6, not a V6, fyi. The next thing is, where did you look for your vin number? The title? Stamped frame number? Data tag? Did you check to make sure all of your numbers are matching? Tags and parts they're attached to are easily and frequently swapped, so you really want to check for the stamping on the frame, typically found on the top of the right side (passenger) frame rail, under the hood between the cab mount and core support crossmember. They can be hard to see as they're not always stamped real hard. Take a look and let us know what you find.
I was using the serial # printed on the tag on the side of the cab as the VIN. And actually, I just realized I was reading it incorrectly. The serial started with F10V6 which I guessed wrong was an F100 V6, but as you mentioned there was no V6 only inline. According to 56 F100 | 1956 Ford | Truck | F100 | Information | Parts
looks like
V = O.H.V. 8 Cylinder-2V Carb (L/D)-272 cid
and the
6 = 1956
So perhaps it is stock 272 or was upgraded to a 292. If love to hear if anyone can tell the difference

it has a factory pvc valve should be around the coil area. I have a
64 F350 a 272 and it has that carb no draft tube and it has a pvc.

First use of the PCV (Pollution Control [smog] Valve) system = 1961. Mandatory in CA initially, by 1963 all cars/trucks had it.
Y blocks w/a PCV use a cannister with a nipple on it in place of the road draft tube.
292 2V: A short rubber hose clamps to the nipple then clamps to a steel tube that winds it way along the right (passenger) side valve cover. Another short rubber hose connects the tube to the valve.
The valve threads into a brass fitting that threads into the intake manifold...just in front of the carb.
Since I see none of this jazz, the PCV has either been removed and the nipple capped off, or the engine never had it.
