I'm considering retiring my tired old 2 bbl on my '65 352 and replacing it with a Holley 2 barrel 500 CFM / manual choke unit. Anyone have any sage advice about this move. Is it up to the task? I'm looking for a smoother throttle response and not necessarily a power boost. Its already overpowering the 3 speed tranny and rear end...

That works very well on a Y-Block. Not sure about the 352, but I would think it would work fine, but we'll wait for someone with more knowledge of the 352 engine's fuel needs.
If you're talking about the Holley 2300, part number 4412, that's a high-performance carburetor meant for circle-track racing where the rules limit you to a 2-bbl carburetor.
For a truck engine driven on the street, I think you'd be happier with part number 7448 instead. It's only 350cfm but that's generally more than enough under 4000RPM. For idle quality and low-rpm throttle response, a small carburetor is hard to beat.
Personally I would stick with the Autolite 2100... mine works pretty good for me...cold blooded like always and also like every other Ford carburetor Ive ever had.
Well i put that exact carb on my 352. It was 8 months between carbs so i can not say for certain, but the seat of the pants feels like it picked up alot on the top end.
I figured out how to get the fuel line and vacume lines to work. And i had to lightly modify my throttle cable. It was the the first part swap i had ever done and it didnt take me more than an hour including the time finding the right sockets and wrenches. It was very easy.
I was disappointed that it was supposed to be a bolt on and go deal, but it still has a dead spot in the throttle right off idle. Other than that response increased slightly over the mid rpms and picked up a lot on the top end.
