Check out the Super Duty FAQ by Monsta at the top of the forum. In a nutshell, 285X16 will definitely fit with no issues. Some users have installed 305X16 with minor or no significant rubbing.
I put BF Goodrich's 295/75R16 AT/XOs on my 1999 F-250, using the stock fancy wheels, about 15,000 miles ago. They look awesome, but better than that, I have yet to get stuck in the mud with them. The original highway tires Ford put on the truck had me getting towed on a regular basis, since I work in construction and have to be in some real mud fields. Since putting on these tires, I have yet to get stuck, and I go into worse places than I ever used to.
The only tire rub I get is when the steering is at it's extreme, and the terrain is uneven causing one of the front tires to be pushed higher than the others. Even then, it has been minor. I see no evidense of tire damage from it.
Not many manufacturers make 295s. I've only seen a couple. But I gotta believe than 305s would be too big, especially on stock wheels. Even with my 295s, I can see that the tread is not wearing even, since the tire is not laying as flat as it should, since I'm pushing the limit on minimum wheel width for these tires.
I just put General Ameritrac 305's on my SD, and do not have any rubbing. I was told at Discount Tire that this is the tallest, widest tire I could put on the stock rims without additional lift.
I think they are 305/75/16's...They ride great, but I haven't taken them off road yet..
