Back then the the usual procedure was a 160 f thermostat in the summer and a 180 f in the winter. Running with no thermostat is a no-no as the coolant circulates too fast to absorb the heat and conduct it to the radiator for cooling. If you don't run a thermostat you should at least run a restrictor to allow the coolant time to do it's job.
