Clutch trouble

How can I tell if i am getting enough push from my slave cylinder?

I recently upgraded my clutch to the 11" from a 10" but its not working now. I can see the slave cylinder push the clutch fork but i don't know how far its supposed to travel. the clutch feels right but wont disengage. by feel right I mean there is resistance the whole way except for the last inch and then it goes easy.

here are the symptoms:
transmission will go into gear with the engine off
transmission will not go into gear if the engine is running
if i put it in gear and try to start in, the truck lunges forward

the original symptoms that lead to me changing the clutch:
when accelerating in third gear it would hit a certain RPM and just stop going. the engine would keep reving but it had no power.

I have searched the forms and found a few common problems that lead me to believe its one of a few problems:
air in the hydraulic lines
flexing firewall
bent clutch fork

I think air in the lines is the most likely and I've tried bleeding it but how can i tell if that is the problem? I don't want to keep bleeding it if that's not even the problem. is there some test I'm not thinking of?

1986 F-150
300 straight six
Offy DP intake
edlebrock carb
4-speed OD trans

Firewall flex is easily diagnosed by having a helper push in the cltch petal while observing the clutch master cylinder. You will see it moving! I re-enforced mine with a 4x4 inch piece of 11ga steel. No more flex!
