If you four wheel, thoroughly wash the entire truck from top to bottom and completely underneath each time you get home. Same goes for driving in snow, or plowed roads with salt or sand.
Undercoating will mask the rust until it is too late, as in you will see rust on the uncoated side. Rustproofing is built in to your vehicle with the galvanized steel. As paint is chipped off, the zinc coating on the steel oxidizes and inhibits further finish deterioration. While this looks like crap, you can take it to a bodyshop and have them repaint it but the prep process usually takes off some of the zinc coating. When you get another paint chip in the same spot, that coating is not there and there is no protective oxidation barrier against further RUST.
For your edification the oxidized zinc turns into zinc oxide or something like that, while ferrous oxide, as everyone knows is the fancy name for honest to badness rust.
