I don't have a pyro yet, however I don't think you'll find much of a correlation between the two unless you're on the verge of meltdown.
The coolant temp of the engine will depend on the temperature of the thermostat being used, the ambient air temperature, how well the cooling system is working, not to mention the variances in the temperature gauges. Aside from that temperature rise of the coolant will lag the EGT's by quite a bit and EGT depends on how far your foot is in it as well as the load on the engine...
Now perhaps if you rephrase it such as...
"1986 C6 with 3.55 at 65mph, what are your EGT's at steady state flat ground" you might get a little closer to what you're looking for I think?

Yes your pyro can hit a 1000 even before your engine hits operating temp if you're mean to it. The pyro is measuring the gas temp coming out of the cylinder it can move up and down extremely quick. For instance if you mash the go pedal in a high gear and you are at a low speed the pyro will climb quick until you get enough rpms to get the air in to burn the fuel you are giveing it. If you are climbing a hill and keeping it on the floor and barely holding your speed or even loosing some your pyro will be climbing quick. let off the fuel and it will drop even quicker.
