Replace 1 leaf spring? Or both

A leaf on passenger side is cracked. Can I replace just the one set of springs on that side, or should they be done in pairs? Thanks.

The main risk with only replacing one set would be the probability of uneven ride height (side-to-side). But if you get a used spring to go with your stock (used) spring, you might be ok. Be sure the replacement has the same load rating as stock.

Usually springs are replaced in pairs. That is, both left and right in front or both left & right in the rear. This helps avoid having a strong new spring on one side and a weak older spring on the other side and making a bad situation worse. Such as the truck won't lean on the older weak spring side and it won't overwork the older spring and cause it to break when you carry a heavy load. Plus the steering and bumpy road controlability won't be adversly affected if you have a pair of new or good springs.

Another option is to replace only the broken leaf. However, if it was my truck, I'd replace both sides with new springs for the reasons Rangerman Stan lists.
