These gauges have a history of being unreliable, especially if someone has changed the sender to an aftermarket one.
I would check your thermostat housing with an infrared thermometer. They can be had for less than 20 bucks nowdays at hardware stores.
If the tstat housing is around 190-205 or so after you have come off the highway then don't worry about it. If it's much lower than you either have the wrong thermostat in it, bad cap, or the thermostat is bad.
Mine came that way, and I replaced the stuck open thermostat and now it rides just to the left of "O".
Beware though, as noted in many other threads, the f'ing PoS $(#(*)@(*$!(*@!&*(#(*@#(*@!(!@ flange for the thermostat will bend if you look at it sideways.

Nope, no air horn on my truck haha. I'm usually getting honked at since I go the speed limit and take a while getting up to it.
My truck was like that, but I put in a new 203 [deg] thermostat from dieselsite, and now i ride on the 'O' and when I working it, its on the 'R.'
I now actually have to turn my heater off when its zero outside.
I'm up near Lubbock. We are down your way a couple times a month. My wife is in charge of a ttu campus down there and I have exchange students to keep track of there too. We're always on the road.
If you are into hunting or fishing or anything we are going to have to get together sometime.
That guy that honked me scared the crap out of me. It was just getting dark and he snuk up on me and blew his horn as he passed. He didn't have his lights on either. It sure woke me up. We were driving in from El Paso that day and I was tired.
For what it's worth, I've been running with my fan off for 3 months now and I have a new thermostat and it is working right but the engine will only get up enough to open the thermostat when the temps are above 60 and I'm sitting idling somewhere. I have my radiator covered too. I have the huge IDI radiator in my from the factory because it is a 94. They work too good for the winter time in most of the country.
In the summer with the air going my gauge usually hangs out on the O.
For what its worth...Install an after market gauge so that you will know what you "REAL" engine temperature is. The stock gauge is nothing more than an idiot light with a pointer. JMHO
