Motor Swap.
Pull all the fuel injection stuff off, and use the later model intake gaskets for the carbed intake.
You will need to add a little electric fuel pump or,
you will need to pull the front of the engine down and change the timing cover for a mech fuel pump. If you are going to do this, it may be cheaper to get a cheap full gasket set for the engine, since you need to loosen the oil pan a little bit to get the front cover off. If you are going to do that, might as well take the oil pan off and re-seal it, put a new seal in the front cover, etc.
Double check the harmonic balancer where the front seal runs. It probably has a groove in it. If it does, go to the store and buy a "speedy sleeve" or seal repair sleeve. It will slip over the groove and give a new surface for the new seal to run against.
While you are in there check the timing chain, it probably needs to be replaced(they usually have a stock plastic gear that wears out).
Replace the fuel pump cam eccentric with the two piece job. And you may have to drill out the alignment dowel pin holes on the older cover.
You can get most of this stuff from the old engine. If you are going to run the v-belt set up, make sure you run the v-belt waterpump and fan. The serpentine setup waterpump and fan run backwards.
