The wife came home from a church eat-out last week and said she had eaten some really great BBQ. She asked the lady who cooked it for her secret. The lady said she soaked the brisket overnight in coffee, then cooked it slowly all day. I'm going to give it a try.

I watched (TV) the U.S. Championship BBQ cook off today. 75 teams from all over competed in chicken, ribs, pork, sause and brisket catagories. I was surprised that sause did not go on the brisket until the last 10 or 15 minutes of cooking. Most were cooked around 12 hours at 250 degrees. Don't tell Greywolf, but the grand champion was a team called The Music City Pit Pals.
