Where are some I can go on? Not anything tough, like rock crawling. But something that wouldn't really need 4wd or would need it but not to a huge extent. I need to find some for fun and I figure it'll lead me some great places for my photography class next semester, hah.

Grab any Forest Service map - just about any road they show on there will be 2wd.

Caribou Pass on the NW side of Nederland. Doubt you'll get up there now, even with 4WD, but in the Summer it's amazing!
