Well as long as i am in the planning stages would it be easy to just install a 300I6 in place of the 302. here is what i do with the truck INTERSTATE Driving up over tall hills and then sometimes on gravel roads. I like to use my A/c and run my radio. as my truck stands its got a very tired 302 with an automatic transmisson and a 3.55 axle ratio. it does have mass air flow 302. I have almost decided to go with the 351w but as i am watching gas prices shoot up its making me question this. What do yall think would it be easier to go the 351w or 300I6.
351W would be easier than a 300, but the 302 will almost match the milage of the 300. I would just stick with the 302 if milage is a big concern, you can buy a ton of gas for the price of an engine swap. Cost wise a rebuilt 302 would most likely be your best bet.

5.8, your driving an extended cab truck. due to the weight of the vehicle the 5.0 mileage will only be 1-2mpg difference to the 5.8 MAYBE. the 300-6 even though its a great motor will require lots of work with little gains.
find a complete 5.8 low mileage wrecking yard motor from 92-95 f150/bronco or 92-97 F250/F350. anything below 100k miles would work well. it will drop right in place of your 5.0, just reuse your 5.0 harness, motor mounts and you can even use the 5.0 computer since its mass air. its honestly that simple. also grab the Y pipe for the 5.8 since its a tad wider.
