Carb Problem?

Carb Problem?
For about 2 weeks now I have noticed that when I'm accelerating from a stop when the truck shifts its like it's not getting enough fuel or maybe to much. I can push more on the pedal and the truck picks up fine but it just doesn't feel right.
Any ideas would be very helpful.
71 f250 360 engine.
