2007 f350 king ranch cc dually 6.0. it has a new therostat and proper coolant. trans temp is good.When i pull a hill with a 5k trailer the eng. temp goes all the way up but stops just short of overheating. I have a cleared out cat and no muffler (straight pipe).
What could be causing the temp to rise?

How do you know it's getting hot? A real gauge or the one on your instrument cluster? The stock "gauge" is a glorified idiot light...
Is your cooling fan coming on? Is your radiator obstructed? Are you using a tuner? When the t-stat was changed did they purge the air out of the system?
Well, something is restricted. Either there's not enough airflow through the cooling fins of the radiator or there's an internal restriction limiting coolant flow through the radiator.
I agree, take the t-stat out, verify its temp setting. Use a pan, boil the water and see when it opens. Have that a temp guage handy to verify. What does your degas bottle look like?
This could also be caused by a an egr cooler. Are you having any coolant come out the over flow, evident by a white looking substance around it. Your truck is a 2007 and if less than 100,000 miles, this problem is covered by the warranty. Are you smelling any coolant out the exhaust pipe?
