When I changed my water pump a couple weeks ago I changed the stat too. Mine had a 182 in it. I got one from advance auto which is a 195. I noticed an increase of about a letter or so on the guage on my last trip pulling the trailer. I was afraid of using a 203 cause basically all I do is pull with my truck and don't use it much at all in the winter. I didn't want my temps climing too high hauling big trailers around in 90+ degrees.
I just used my stock housing with no issues. It looked in real good shape so put in new stat and gasket and no leaks.
