Well I finally picked up me new to me truck - a 2000 PSD 2WD Ex. I'm excited to start playing with it a little and hook up my trailer to see how she tows! The truck has a Hypertech tuning module and an unknown manufacturer aftermarket exhaust. I think the first thing I should do is install a decent set of gauges so I can keep tabs of what is going on. I'm thinking about a 3 or 4 gauge pod from ITP Diesel. This will include ATF temp, boost and EGT. I'm wondering how acurate the stock water temp gauge is? Maybe I should opt for a 4th gauge (water temp)? Any thoughts?
it sounds like some factory temp gauges go tothe half mark and never move. Mine sits there while my other gauge moves from 195 to 225. I would say go for the water temp gauge if you can.

Since you plan on pulling a trailer I would definitely opt for an accurate tranny temp gauge over a water temp. - Both if possible.
There are many threads addressing the relative inaccuracy of the stock Ford gauges in the Excursion (and SD) lines.
I installed a set of dual Aeroforce gauges and a couple of analogs -
I run a gasser, so my priorities while towing may be a bit different than a those with a turbo-diesel. I constantly monitor manifold vacuum (analog), water temp, head temp, and tranny temp. The other "blank" on the Aeroforce gauge setup will scroll through other parameters available.
IF I had a diesel, the four parameters you mentioned would certainly be my choice for add on gauges.
