heating while off

While driving my truck temp gauge is normal.When I stop and turn it off and sit for a minute or two and turn the switch on/not start it up but just in the on position,the temp gauge goes almost all the way over to hot.When I crank it and get going again,the temp goes back to normal.Any ideas what's causing this?

When the engine is running, the water pump is running coolant through the radiator, and the fan is turning at the same time, pulling air through the radiator to cool the coolant/water down.
After running/drivning, it warms up. After shutting engine off, that coolant/water isn't circulating, getting cooled off. But will cool off naturally.

That's called hot soak and is totally normal. The coolant continues to absorb heat from the engine after shutdown, thus the temp rises.
