In looking at the door tag on my 4WD, '79 F250 Super Cab, it says the axle is 3800 lbs. The shop manuals only list 3350? and 3500? on the identifcation section.....What could it be?

I suppose maybe so, but I've only seen them under crew cabs, snow-fighters, and f350's. In 30 and 35 splines.
And similar f150's with leaf spring dana 44's 5 lug.
What you saw doesn't mean anything.
Dana 60 was the standard axle in the 1979 F350.
1978/79 F250, 1979 F350 with the snow prep package included the Dana 60 axle on the F250, but not the 1979 F350 as it already has the standard Dana 60 axle. The snow prep package includes items beyond the front axle such as HD shocks, clearance markers, gauges, etc.
It's easy to confuse Dana 44 HD with the Dana 60 as well.
