ok so how do i tell the difference between pistons made to work with NOS and racing pistons????

i was told i need to have NOS pistons, rods and gaskets.... and all in all it only cost a couple extra hundred bucks to make a motor NOS ready if you're already rebuilding it..... was this wrong? if so what is right?
