I have tried to read some different threads but I still havent found a clear answer.

Yes you can. When you go into power programming you can select return to stock and it will restore everything back to stock with no trace of it being there. Then all you have to do is remove the ODBII cable and the mount and your good to go.

Just make sure to run the truck 100+ miles or so (i think) so that it will read normal. I yanked mine out when I went in for the inspection sticker and they didn't pass me because the codes showed that they were just reset. I had to go back a couple of days later and no problems. I then found out that I could have just left it alone and there would not have been any issues leaving it in level 3 tune for the inspection.

The problem here was that the inspection people wanted to know if there were any internal codes showing. A fresh reset was what had them concerned.
From what I understand the truck will record the the computer was reset but not what was changed.

Yes. The edge stores the stock program present when you reprogram the PCM. It must be stock before the dealer does a flash. If you have the Edge program installed and the dealer does a flash you have just turned your EVO into a paperweight.

Custom tuning. Edge Evolutions only have the canned tuning, Gryphons have canned tunes and you have the option of getting custom tuning also.

I belive with any Programer you have to set back to stock , before going to dealer. This is also noted in the instructions "no problem"

If you get you existing EDGE "GRYPHONIZED", you will have a custom tunes to take full advantage of your particular Mods

if you dont have the EDGE, dont get it then send it; just get the GRYPHON (same price)

Has anyone done a side by side with the Gryphon and 5-star?

I don't have a tuner yet...wife tells me I have to get the "sexy sounding" exhaust first.
