I had a marathon thread going in here on that problem (search; steering jerks back and forth). Mine would suddenly turn right then left then right etc and you could watch the steering wheel go through the motions. I replaced the PS pump and that took care of 90% of it and then I replaced the belt so now it is fine. I could stop on a gravel shoulder and pull the wheel back and forth a few times and it would be fine for a while. That was 6 months ago. I also sprayed the front u-joints with penetrating oil at the same time while turning in circles but I don't know if that was the problem. It did cure the dried out u-joint wiggling problem though. I was leaning towards the spool valve but if that was it it just didn't have enough pressure going to it. Still a mystery to me. It was a month after it was fine that I sprayed the joints.
