Well, you've got the whole engine apart already to do the boring so you should replace just about everything..If the crank needs grinding get it done too.
Big end bearings
Main Bearings
Pistons and rings (obviously)
thrust bearings
all gaskets/seals
reface lifters (and get them checked to make sure they all work)
cam bearings (usually get that done by the machine shop when they do the bores)
new bolts throughout
new oil pump
replace flywheel bolts
new cam chain
and possibly lots of other things I have forgotten...
