In the process of tearing down my engine to get the heads done and a new camshaft installed, I have found some curved plastic pieces that are inside the valve covers (so on the top of the head). I also noticed them when I was pulling my oil pan a while back. Any ides what these could be??
Very old valve stem seals. They used to be rubber(soft) back when new. They turn rock hard and break apart and either lay in head or some smaller pieces will find their way down the oil return hole and down to pan.
Your engine was probably smoking like mad right? I hope that's not why you're tearing down the engine. Those seals are only a couple bucks and it would have fixed the smoking.
They also plug up the oil drain holes on the ends of the heads. It's a good thing to get them out of there.

Well that is the reason why I am tearing down the engine. But I had a new cam to install so I had to get it pretty far down anyway and i do not direly need the truck for the next few weeks so I figured I would just pull the heads and just get a full valve job while I was at it.
