Just bought

Ok, I just bought a 351M out of a 78 pickup, low mileage. It has been setting for 3 yrs or so. Anything besides priming the oil system I should do before cranking her up for the first time?

I can think of two things.

First, put the engine at #1 top dead center then pull the distributor out, now stick a drill with the same size bit as the distributor drive shaft down the hole until it is seated in the top of the oil pump then take the valve covers off and run the drill and make sure you have oil coming up to the top of the engine.

#2 Now turn the engine over by hand (ratchet wrench) 4 or 5 times give another quick drill prime and put the valve covers on and distributor back in at TDC then if there was nothing seized start her up and good luck.

I would also pull the spark plugs and take an oil can and squirt just a little oil in each cylinder if it has been sitting that long before trying to start it.
