On my 73 you have to loosen the motor mounts and jack the motor up to give you more clearance. I took my motor out of the truck when I did my oilpan gasket and oil pump as well as most of the gaskets on the engine at the same time.
You're probably going to have to lift up the motor. You don't have to remove it from the truck, but you'll most likely have to remove the radiator hoses and free the motor from the mounts, and lift it 2-3 inches. Some motor mounts have provisions to let you slip some squares of 2x4 into the mounts after the motor is lifted, so that you can set the motor back down. This lets you get your cherry picker out of the way.
I changed the pan on the 351W in my '77 LTD a couple summers ago - completely different vehicle, but same problem (crossmember right under the pan). I used the method I just described. The next time I have to change a pan, I'll probably just pull the motor completely. Changing the pan on your back and chiseling out the bottom of the rear main seal is an awful job.
