I have heard of it being done, but it just doesn't seem safe to me. Especially if you plan to use the truck as a truck

It is done all of the time.
Make sure that you do not remove one that is essential for performance, such as any main support leaf, as each leaf provides a progressive rate in the entire leaf pack. You can make the leaf just above the one removed silghtly weaker because the one removed provided some support.
This may not be the best approach, and perhaps a longer shackle (provided you have a tension shackle) might be a better and more cost effective solution.
Entire leaf packs take a little while to take apart, and re-assemble.

You can do it... But you have to be carefull... When you take springs out it changes the spring rate & lowers the truck.... I wouldnt recomend it if you use the truck to carry loads If its a performance truck before you start runing the truck you will need traction control.... Cal trac bars ..... ladder bars.. or something.. our you will bend your springs...I know because i did it...
