When a cooling system is under presure, what temp can the coolant get up to before it boils the coolant out of the systems overflow.

Are you talking about boiling over or just when will it start pushing coolant out? It will start pushing coolant as soon as everything expands enough to get up to the rated pressure on the cap. If you want to know at what temp things will start to boil, well that all depends on the pressure and the amount of coolant (coolant/water ratio).

Plain water boils & produces steam at 212*, add antifreeze & it will go higher before it boils & then add presure ??, thats the part that fuzzy.

By having the presure build up in the system, how much temp over the 212* can it go before it does start to produce steam & opens up the over flow in the cap.
Most caps you see are 15 to 17lbs normally.
Old mec told me years ago to use 7lb caps, keep the presure low on the whole system & you keep from busting things, think what the radiator, heater core & those hoses got to go through containing all the hot fluid.

Boiling point of water at different pressures -

If you have a 15lb cap, add 14.7+15 to get your pressure. That would be almost 30psi or 250 degrees.
