I am looking to install an a/c switch so that the stupid compressor doesn't come on with everything but the vent. Anyone don't that? Where would I hook in?
You could splice a switch into the purple wire behind the climate control. This is the wire to the a/c clutch cycling switch, according to the wiring diagram in my shop manual.
What Roland said should work just fine. There's only two wires to the compressor, so interrupting either one with a switch should get done what you're trying to accomplish. The wire behind the CC panel would definitely be the cleanest to do, as to not run any extra wires through the engine bay and have them all hidden behind the dash. Not sure if it would throw any kind of codes, but I don't know that anyone has done this previously or not for reference.
Hasn't it ever bothered you that it is always cycling when not needed for cold air or defrost? J/K
Honestly, no. I don't mind it at all since it's taking the moisture out of the air, making the cab of the truck less humid and stuffy. I've just learned that if I don't want the compressor on, I just run it either on floor only or panel only. Compressor doesn't kick on in either one of those settings.

Very well could be. It can get pretty humid here in MO, even when it's cool out. Not as bad as the south eastern states, but still. Let us know how it works and how you go about getting it done.
This is one of the projects that I want to do as well.
Sometimes you just don't need the AC compressor on and want to use the defrost vent for cabin air.
