I'd go with an SCT Xcal and a custom tune. I got tunes for my V10 from 5 Star Tuning | Custom Dynomemeter Chassis Tuning Products and Services
I have similar mods on my truck. I would recommend swapping out the stock muffler for a freer flowing unit, however having no cat helps.

I've tried a FM70, FM50, FM40, open exhaust & cat only. They all make it sound like a ricer. The no cat w/ factory muffler is the most tolerable/decent sound I've came across.

I have a dynatech cat among other things on my truck and it doesn't sound anything like a ricer.
