I have seen many posts on this board asking about MAF conversions for older (1988 up 351W EFI) trucks. The conversion from Ford SVO works great but requires very little modifications to work with the 351W firing order (13726548). I installed my MAF conversion 3 years ago because of the mods I did on my truck required it. Once installed, the MAF will allow you to do what mods you want to do and everything will work. Without MAF, any mod you do will greatly affect the vehicle and probably will not idle or run. I run 87 octane pump gas, get around 17mpg (12mpg stock SD) on a 375HP/475ftlb SEFI motor. You do not have to cut/slice any wiring harness, you get a remanufactured Mustang computer (1994), an overlay harness for your injectors, plugs for your old injector harness, a new MAF sensor, new airbox top and adapter hoses.
The Mass Air conversion (I paid $695) you will need depends on the tranny type you have. The modification (I have created a schematic and instruction sheet) to the overlay harness takes about 30 minutes and a soldering iron. The installation for the unit takes about 2 hours and then you are ready to throw any modication to the motor you want (within some limits). The MAF sensor is calibrated for 19lbhr stock injectors and your stock injection system (throttle body, upper/lower manifolds) will not support larger injectors without modifications.
There is still another thing everyone might consider is the "shiftmaster". Go to www.eec-tuner.com for information. This allows you a way to do modifications to the computer and you will need it. Anyone trying to set up a decent idle on a modified motor with any kind of cam will tell you that the EEC computer will not let you get above 750rpm. My truck will not idle smoothly at anything less than 950rpm.
