Ok...on a 302 the tranny lines run across the front and up the drivers side to the radiator...it's possible they could have been damaged by a flopping power steering belt. If you've got that leak fixed, and the trans was running fine before I'd go over the fluid level in the trans really well....make sure you're checking that running with the truck warmed up. If you've emptied your power steering system, and with the belt flopping off quickly, it's possible the system is just refilling little bits at a time...the pump forces a the fluid into the lines and steering box, but the the belt doesn't stay on long enough for you to be able to incrementally fill the system until full. I would attack the belt issue first, then worry about the power steering fluid level after.
