Where do I find the casting #'s on a 302 for the heads?

They would be on the head gasket side of the cylinder head. Typically it's a four character sequence such as F7TE.

So if you had a mirror would you be able to see them with the heads bolted to the motor in the car?

Yes, if the intake manifold is off. What kind of engine are you looking at? 5.0, 302, 351?

I'll take a guess at what castings you have; D8AE. The casting numbers are on the underside of one of the intake ports. With the intake manifold off you should be able to put a small mirror under each of the intake ports and eventually see the number.
