Mismatched Carb

Hopefully I can fix this problem, even though it's not a real big problem. Just built a mild 351M: ported heads, ported exhaust manifolds, mild cam, edelbrock performer 400, and Holley 3310-1 carb (780 CFM). Yeah, I know, wrong carb for the motor. That's all I had laying around and my budget was slim to say the least. My question: is there any way I can run this carb without overwhelming the motor? Any way I can tune this to work with a lower RPM motor? I'm sure that a 600 or 650 CFM carb would be much more responsive and be a lot better for me, but I'd like to work with what I've got. Other than that - anyone want to swap your 600 or 650 for my carb?

I actually had good luck running a 750 on a mild 351m. I found it actually idled better than a 600. With the cam the 600 had to be opened to the point the transfer slots were exposed ruining the idle. It didn't seem to have big enough primaries to supply enough idle air.
