I am about to remove the bed from my 65 short Styleside truck. I have built a dolly of sorts that attaches to the back of the bed. I used the captured nuts where the upper tailgate support and lower tailgate pivot normally bolt in. I am using 3" casters so I can hopefully roll it around fairly easily. Also I can store it upright inside the garage in much less space.
I will let you know how well it works once I get the bed off.
Should work pretty well, I usually slide them off and stand them on end and walk them around where I need for them to go. A dolly could add a little convince. Be careful that it doesn't scoot out on you. You probably will need to have it upright before putting the dolly under it.

I planned to remove the casters and bolt the frame of the dolly onto the bed while the bed is still on the truck. Then stand the bed up on end (with the wood frame taking the weight so as not to ding up the bed). Then tilt it a little to attach the casters, one side at a time.
I know what you mean about it scooting around, I got locking casters. I will let you know how it works.
I cut up an abandoned walmart shopping cart (all steel). Leaving the floor with a little under-support, I used my engine hoist to remove the bed and located the "truck" under it. The thing rolls around nicely and I can move it in or out of the garage with no problems.

Chris, Unless you drop it you don't have to worry about bending it, they are not that heavy. I would treat one with a fresh paint job differently, but until it is there, you can waste a lot of time fighting dragons that aren't there.
Well I got the bed off and now can roll it around. I even did some hammer work on the underside of the bed.
The dolly makes it very easy to move it around, except I will have to lay it back down to move it inside as the garage door opening is too shotrt to roll it through standing up. Otherwise no problems.
