tempature staying below normal

Had replace the thermostat last year, the guy sold me a 185 degree thermostat, well the tempature never rose above the N in normal and it really never got hot, so I replaced it with a 195 acouple months ago, still does not want to climb, is there a problem? I've read wherer the valves like to work at a certain temp and not sure wheather to be concerned or not.
