The truck starts up fine, every time. Driving, the truck feels smooth. Sometimes, when I'm approaching a stop sign, red light, etc. the engine gets real rough. Like it's going to stall. But it's only when I'm slowing down to stop. When I actually stop, the engine is smooth again. What could be the issue(s)?

The Carter YF 1BBL carb is famous for the baseplate to carb body screws working their way loose. Since most of the later versions also have the air cleaner that bolts to the engine, it tends to hold everything in place rather well, most of the time.
Give the carb body a quick test wiggle. You just may find you have a few (4) loose screws, no pun intended..........
I had the same problem turned out to be a vacumn leak, mine was at the base of the carb there was a crack. Check the carb bolts as suggested but also vacumn lines and maby spray some carb cleaner around the manifold to see if there are any leaks there. If there are any leaks the engine will rev up. Just do a search on vacumn leaks and you can get some more suggestions
Cool. Thanks for the suggestions. This is my first "automotive adventure" where I'm hoping to fix the things that aren't working, rather than take it to a mechanic. I imagine there will be lots of rough patches along the way, but you'll never learn if you don't try.
Already made my first fix! The bench seat had a big ol' tear, so I grabbed my duct tape and patched that sucker up.
