If you know the pins for the sensor put a ohmeter on it check it cold write it down, go for a ride 5 minutes check it, 10 minutes check it, then 30 minutes do a lot of stop and go wait in the drive thru get a cheesy melt, check it. If it didn't seem like a smooth transition could be bunk or the sensor went to infinity it is bad, It is a thermisiter they can break contact at certain temps especially if they have been overheated a number of times!!
Good luck on finding a chart, Maybe the manufacturer of the actual themasister would have it but at least checking while the temp is rising will indicate a break in the signal.
