just remove all the bolts except for the front next to the bellhousing, loosen these and tip the pan twords the rear. You should be able to catch all the fluid. Some auto parts stores sell a plug kit that you can install in your factory pan. but draining isnt much different than just removing a cooling line and starting it up. I like to change the filter once in awhile.
If you find a plastic plug laying in the pan of the transmission, you will know that it hasnt been changed since new. for the rear end, I would drive it around a bit just to warm it up and then do about the same as I told you with the tranny pan. You will probably need a hand pump to fill the diffy though. It just makes it easier. Just cheap 80w90 will be fine, if it has a limited sliip you may want to add some friction modifier for the clutches, but if it has any miles on it and its just a farm truck I wouldnt worry about it because they are probably warn out.
