I may be blind, but I don't see the Powerstroke listed anywhere for an F-750 Chasis Cab, just the 6.7 Cummins and the 7.2 CAT, why is this?

They do that a lot with the heavy duty trucks. The cummins is a "big six" so it gets listed.

In fact, if the Cummins is listed that's new...a couple years ago, the only engines you could get in the 750 were just a few variants of the 7.2 Cat.
