I've never used one, but read plenty of posts/threads from folks who have, and it seems to work just fine. Haven't read of anyone being unhappy with it.
What purpose does it really serve? I mean, by the time I park, the truck is already at 400 deg. A couple more seconds and I shut it down. If you were racing and shut down after a hard run, I could see it.
I've been using one for 4 years now.
They monitor the temps coming out of the turbo. You are right in that most of the time the truck will be cool enough to shut down, but if you're 400 degrees you speak of is from a pre-turbo pyrometer, that does not mean that the temp of the turbo is 400. That's the temps coming out of your cylinders. The turbo will heat up and hold on to heat because it is a large mass of metal. Therefore the need to monitor temps after the turbo for proper shut down temps.
