OK, this one has me searching under the hood with no results... I have a '64 F100 with a fairly strong 1970 351W/C4 combo (engine: 40 over, 214/224, 476/496 cam, roller tip rockers, etc, etc).. tranny rebuilt stock about 2 years ago..
Engine only has 750 miles on it so I haven't really pushed it.. but the other day, I kinda jumped on it off the line (dead stop) and I got a brief tinny rattle (not pinging) sound (almost sounds like fan blade touching a metal shroud - checked that - not the problem).. now if I am rolling and nail it back to low gear, no rattle.. this only occurs from a dead stop.. I can't see anything lose..
any ideas?

I would check them u-joints first. Every bad joint makes a different sound. I had one that sounded like popcorn popping once. From there, just crawl under the truck and start looking for loose parts.
Double check your convertor nuts. These things can loosen up because they get settled into a different position after engine break in or after time. Recheck them ! Also, it isn't common on a Ford, but you may have a cracked flex plate as well.
