I recently replaced a head gasket on my 76 F150 4x4 with a 360 motor.
I started it without the valve covers, and noticed I'm getting a LOT :-staun of oil around the rocker arms. Is this normal? There's a steady stream of oil coming out the oiler doo-hicky. Can this be changed?

Let your dipstick will be your guide to let you know if your oil level is to high or to low. Not sure what you mean by too much?
As for the oil coming up out of an oil dewhickything, well I am guessing that since the oil pump resides in the oil pan at the bottom of the motor and pumps the oil up to the top, you must be looking at one of the passage ways. This is why you have valve covers and valve cover gaskets. the oil will lubricate the rocker arms then find its way back down through still more passage ways to the pan, where the whole process gets repeated.
I guess what I meant was that there seems to be too much in the valve train...I've never seen "pressurized" (albeit low) oil come up out of the head, but I haven't really looked before. Guess my oil pump is doing it's job.
This can be corrected by inserting a Holley jet or drilling a short section of bolt with a .090" hole and drop it in the stand into the oil port. This is part of the oil modifications most people do on the FE (360/390) engines. There are other mods to be done to the engine also that go along with putting the restrictor in. If you do this you just need to make sure that you are getting oil to the end of the rockers. I have seen and engine putting so much oil into the valve covers that it can't drain away. Most of the time when this happens is when a high volume pump is put in.
