Question. What kind of fuel economy/ power decrease can I expect pulling the 8000 lb toy hauler we're thinking about getting ? What other problems can I expect ? I'm new to this diesel world, so I'm looking to you guys for some good advice.

Your going to need a bigger tranny cooler, go with a 6.0 or a aftermarket, the biggest you can find. A TC lock up mod or TC controler is not 100% nessasary but will help keep the temps down. SP Diesel makes a great one that also turns the EBPV into an exhaust brake... www.spdiesel.com
You need to get a set of gauges, Pyro, Boost and tranny. www.dieselmanor.com
Really need to get a good aftermarket intake, I believe you have the K/N drop in filter and that is one of the worst filters for our trucks.
Other then that your good to go for most anything...
There is always more to do, exhaust, all the little free or almost free mods, better chip.... but these are not high on the list if money or time is an issue...
rdwelch2 - I pull a 8500 # (loaded) travel trailer with my truck . I am pretty much stock except for kwik(6637) filter and 3 gauges. No problem at all. If you can keep her around 2000 rpms you might get 12 -13 mpg. Thats about what I average now. Took me awhile to learn to keep the rpms in the right range. If you want to push 70-75mph you see a pretty good drop in mileage. Trans cooler a good idea like someone said earlier. This is my next mod .Hope this helps. Good luck , Bill!

Great! And thanks to all for suggesting the cooler. I had thought about that earlier in the decision making process. Had forgot about it. Thanks to all for the reminder.
