If you have less than 100,000 miles the engine is still under warranty, let the dealer take a look. My guess is your turbo is overboosting causing excessive cylinder pressure which stretches the headbolts and releases hot exhaust gas into the cooling system which overheats the engine.

What does your boost gauge read after you put the throttle to the floor, before you had the issue. If you are over 30, you have probally been stretching your head bolts for a while now.
Turbo hose blowing of is a TSB as bigredtruckmi indicated. But if you are overboosting the intake, this will happen premature.
Running a 10000# truck with 4.10 gears will never get you good Fuel Economy. 10.5-11 would sound right to me. You are getting the other 2 mpg from the increased horsepower the tuner is supplying.
Also, if you are replacing your head studs, you should go with ARP Head Studs. Especially if your decide to keep the predator.
I would highly recommend talking to Matt at LIPD. 1-888-229-0502. He can supply you with the head studs and a real SCT XCal2 tuner that won't give you issues like this.

"Predator" "chips/inline modules" are death to the 6.0 & Torqueshift (Predator is one of the ones at the top of the do Not use list). Couple this with no gauges and you are towing, this is a recipe for disaster. More than likely blown head gaskets or EGR cooler or both. Also could have turbo problems on top of all this.
FYI if they have to do head gaskets, pray that there are no star burst patterns on the pistons, cause if there are then you will not be covered by warranty as this is one of the signs of using a "chip/inlilne module"
