In order to get more towing and passing power out of my '93 5.0L EFI, I've decided that maybe a stroker kit would be my best bet. (Bump it up to 347 or so) What is a safe maximum oversize for that engine? (If I do it at all). Any potential computer problems? (not going to touch the cam)

Can't give you overbore advice/specs, I'm a block block man. :-) As to the computer, since its a speed density system, the computer will not be able to compensate for the added displacement. You may end up with a lean condition if you don't a) add larger injectors or b) reprogram the computer.
